"Kesumba(B ixa orellana L.) plant has been commonly planted as an ornamental tree. The seeds of
the plant are used as one of the natural sources of dye stuff for batik and tenun (woven fabric) industries. Only few people know about the possible use of the seed as food colourant. An
investigation was carried out to determine the content of bixln and norbixin in the extract. One
possible use of the pigment as food colourant was tested by applying the encapsulated powder form
of the extract in yoghurt with concentration of 1%, 5%, and 10% (w/v). The degree of colour acceptance was tested by organoleptic analysis with 20 panelists. B ixin represents 83.41 ± 4.54%
andn orbixin 19.19 ± 1.56% of the total carotenoids found in the seed coats extract.The result indicateg sood acceptance of panelists on the 5% Pigment's concentration tested"
