Abstract/Notes Oil palm (Elaeis guineensis) offers high content of ,B-carotenepigment. ,B• carotene can 'be extracted from palm fibre waste of empty fruit bunches, which is usually only used as fertilizer or burned to produce heat in the fuel industry. ,B• carotene has been used as natural food colorant and source of pro-vitamin A, which addresses the pro-vitamin A deficiency among children in Asia and sub• Saharan Africa. Here, we utilized /3-carotene concentrate from palm fibre waste and use this pigment for a nutritious food colorant. Prior to application for food, it is important to assay its stability. We focus research on the stability of oil-in-water emulsion with /3-carotene concentrate mixture as a function of high light illumination (2500 lux) and thermal treatment (at room temperature and at 55°C).
